Toninight I made a sour cream custard. It will be used tomorrow for some cookie dough iced sour cream that I plan on making. :shok:



A few of things I've made earlier this week.

Some chocolate chip cookies. First time I've made them as far as I can remember.


Also made some orange pekoe frozen yogurt which is so good :shok:. First I steeped about 15 bags of tea, then reduced the mixture and make a syrup out of it.

And the outcome when mixed w/ some 11% yogourt.

mmm I love custard. Especially mexican flan.

That orange pekoe reduction/syrup looks like some yummy caramel.

Haha, I'm a full blown foodie at home. I love to cook, here's some stuff I've made in the last month;

Duck Sushi with Gran Marnier sauce
Roasted duck stuffed with lemons
Honey-Ginger Turkey pot pies
Roasted Beef with Lingonberry and Mead Glaze
Scotched Salmon Flambe
Vanilla Bean Creme Brulee Pie

I'm rigging up a sous-vide at home next week. I've cheated with beer coolers and stockpots before and it's awesome for Pork tenderloin, poultry and veggies.

I'm going to make Butterscotch apple tatin or gallettes tomorrow I think :D

The second picture, are those the Honey-Ginger Turkey pot pies? I prefer to bake as I am not very good at cooking. But I was looking to make a chicken pot pie this weekend.

Yep. I just threw an apple on them to mix it up that time. It's really good with ground pork, and I throw blackcurrants and chopped dates in it as well. I can PM you a recipe if you'd like.

I had typed it up for some friends on Facebook so it was nice and handy.

Pie Dough
3/4 cup water
1 stick of butter (melted, or very soft)
3 cups of flour (I use 1 cup of Whole wheat, 1 cup of Rye and 1 cup of Enriched White, but straight white will work).
2 egg yolks - beaten

*If you're using just white and want a nice crust color add a pinch of saffron to the water (make sure it's hot) and let it sit for 15 minutes.
You can strain out the saffron filaments or leave them in, just aesthetics really.

Mix the butter and flour until the butter's no longer visible in the mixture.
Add the egg yolks, and water and mix until the dough all sticks to itself.

Grease a pie plate and pre-heat the oven to 350°F/180 °C

Roll the dough fairly thin and put in your greased pie plate. Trim the edge with a knife held at a 45° angle so it overlaps the whole lip of the pie dish. Make sure you have enough dough for a pie upper crust later.

Pierce holes all over the pie. I don't use beans as a weight as this is a pretty sticky dough and they don't come out of the pie crust well.

Bake for 8-10 minutes and remove to add your filler.


Honey Ginger Meat Pie
500-750g of lean ground pork or turkey.
Pinch of Kosher salt
3 egg yolks
1 Whole egg beaten
4 teaspoons ground ginger (I love ginger, if you're not as crazy about it, remove a teaspoon or two)
1/2 tsp ground pepper
1/2 cup of honey
1/2 cup of dried blackcurrants
1/2 cup of dates
1/2 cup of raisins (optional, there's lots of fruit in there already, but I love raisins)

*I add about a teaspoon of freshly ground nutmeg as well, but it's got enough spicing without it if you prefer*
Veggies or other filler to suit (I find peas work decent, I'd stay away from really savory veggies like asparagus).

Heat the oven to 375°F. Brown your meat in a skillet and drain afterwards.

Mix the meat with the egg yolks, honey, fruits and veggies and fill the pie. The filling should be fairly wet.

Wet the edges of the pie crust with water using your fingers or a brush. This will let it 'glue' to the top crust

Place the top crust over the pie and pinch the edges of two halves together after they've been wetted to make them stick.

Cut some steam holes over the pie. I just make dashed lines for where I'll cut after and a couple in the center of the slices.

Take the whole egg you beat and brush it over the top of the pie. Just a light painting to make sure the whole crust has been covered, it'll give your crust a nice gold colour.
Bake for around 45 minutes to get the crust golden brown.
