Based on your description the 5800x3d is likely your best long term option if your wanting to make the best use of what you have and delay any further upgrades as long as possible.Following this as I'm in the same boat. I took the plunge recently and swapped the gtx1080ti for a reference Radeon 6950XT but still on the same CPU, the ryzen 3600. The ryzen 5700x is on my shortlist too, and came here to ask the same question: would it be silly to consider anything less than the 5800x3d when the PC is primarily for gaming? Plus adding the cost of a good cooler... the x3d is maxing out my PC upgrade budget.

If you don't want to go that high in price, I don't think you'd be disappointed by upgrading from the 3600 to a 5700x, 5800x, or even a 5900x depending on your budget.
