A 7850 will only be about 25% faster than your 5850. If you want to make it noticeable, you should go for at least a GTX670. Check out this comparison:

What are you talking about? You don't need to run 6GB of ram in an X58 motherboard. Likewise you don't need to run 3x 2GB sticks either. You can use 2x 2GB just fine. Triple channel functionality is there only if you choose to take advantage of it.
