Unfortunately, all the print shops still use Mac and Mac version of Adobe. It's pretty much standard in the design realm which is why I have a Hackintosh for a family member. But even as Adobe Cloud couldn't be local installed, Hackintosh is getting less and less usable for my case as staying on old version of software won't be possible in the long run.
 
Apple has been a pain about that for a very long time. I still have a mini stashed away in a secure location (literally in a locked room with limited access even within the company) with 32 bit support because of legacy software I need to launch on occasion. Thankfully with something like illustrator doesn't matter if it came out of a windows machine or a mac an illustrator file is still just an illustrator file etc.

I have some worthless Adobe certifications, worth less than the paper they are printed on and been writing PDF based code recently... what a mess the whole Adobe ecosystem can be is just scary.

Not the file, it's the fonts that's the problem. Apparently there are only fonts sets that works in Mac Adobe and no Windows Adobe or they don't look the same.

I honestly forgot about some of the font trickery... however at this point "most" of them should be available in OTF variants now. Very much wasn't the case that many years ago. For the couple standouts there are ways/tools to convert the missing ones to OTF.

I have had to do it a few times where very specific fonts were wanted but were not OTF formatted already. 6-10 font fail overs in CSS was a nightmare compared to just doing OTF conversions and calling it a day and just listing the primary with a failover.
