Considering the minimal real world differences between 3.0 and 4.0, I cannot picture choosing to go to a 5.0 drive if I have to have a huge cooler on it just to keep it cool.

indeed...but it is probably a boon for content creators in having that much bandwidth to stream / encode / decode content.

I had 3.5in HDD liquid coolers at one point but never used them.

NVMe liquid coolers on a fully custom loop would be interesting.

I am quite happy with the PCIe 3.0 speeds I have that don't need coolers on them
