Very old - The original Wizardry series on the Apple II
Came with graph paper (no mapping function), when a character died, he died and if there wasn't a party member left alive there was nobody to drag your body back to be ressurected. Even ressurection had a constitution penalty so there were limited times when you could do it.
I'm sure I spent over 200 hrs on each of the installments.
Old -
Elite - Vector graphics space pirate/merc/trading game. Docking at the stations was a major PITA until you could afford an auto docker. (Not really playable any more due to graphics, but the game play is still life sucking!)
Classic - (two on my list)
Pirates Gold - Hours and hours of play trying to keep your crew of cutthroats together long enough find the spanish treasure fleet and plunder the spanish main! (Still playable for a fun evening)
Civilization (original) - What can I say other than "I want those 3 years of my life back....
. Still playable (if you can get it up and running in a virtual box).
Timeless - Gotta be DiabloII
No other game has provided so many hours of replayability to so many for so little.
Can't beat a game you can pick up for $40 which has free on-line play and still has a strong community. (Not to mention that blizzard is still supporting it with real content patches).
Too many RPGs to mention that should be on the list.... I played just about every non-linear rpg I could get my hands on in the 80's. (Didn't like the kings quest style as I found them too point a - point b limiting.
