    I don't think 750 watts is enough. If it ran you would be pushing that power supply hard. Especially in the later years. Power supplies degrade over the years and pushing on a 750w would make it degrade much faster because if your i7 is overclocked, which I recommend for quad SLI, it will break...

    The x3 720, would definitely act as a bottleneck still. It simply not a fast processor. In games like farcry 2 and gta4, which are cpu limited, your going to have kind of bad performance. GPU limited games you are going to miss out on about 15-25% of the frame you could get.
