I found my V2 to be a bit of a mess. Every concentric nut on the bloody thing was either far too tight or far too loose, extruder arm was too tightly locked down, and I had overheating stepper issues on the stock 4.2.2 board, which had to be swapped out for a 4.2.7 board. If I was a complete noob, I'd be pissed, LOL!! My Ender 5 Plus was a far better "out of box" experience.
I replaced the bed springs right out of the gate, and did Capricorn tube just because I had some laying around. The first "printed" mod you do should probably be a filament guide, as you noted it's a mess in stock form. Another HUGE quality of life upgrade that a lot of V2 users do is JyersUI firmware. It's a Marlin branch designed specifically for the V2, and it's a beautiful thing. It's a must have. But for that, you'll need to open it up and check what version of board you have. I flashed both the new screen and the new board with JyersUI, and I cannot say enough good things about it. If enables tons of newer Marlin features, including manual mesh creation, which pretty much kills the need for a BLTouch IMO. Can't say enough good things about that firmware. My next V2 upgrade is that stupid extruder. I cannot fathom for the life of me how they can give you a 32 bit board, silent steppers, nice new color screen, and yet still ship with that godawful plastic extruder.
