I think most people play Online games which I dont think needs a lot of vram, unless the person is playing Ark Ascended that games chews up ram also , myself I play mostly games that are not online which I noticed to need at least 16 Gb vram for my settings I was caught off guard last year when playing the newest dragon age and at times I was lagging then I did a boss fight and lagged out was getting 15-20 FPS I could figure out why I thought that my 16 GB 6800xt was toast so I checked and it the game was swallowing up 15.4Gb vram which this game really doesn't have the best graphics, I ended up buying a vidcard with 24 gb ram because the card was on special also it wasn't a Nvid card which I think are 80% overpriced, as far as I am concerned those cards are more for professional developers and unless you need those Cuba cores and other things on Nvidcard. but a Nvid cards just for gaming nah, that's my opinion the money I saved I put into other things in my PC like second 4Tb Drive for all my games and otehr files and still had a little left over
