Yup you can use any GPU really that can do those resolutions (Pretty much anything 10yrs or newer...). Gaming wise it will depend on the game if you can max out the 100HZ or not!

Were most games at 60 fps?
Yes, most games would be 60. Many would run between iirc 50-80 fps with some tweaking in the settings, but keeping settings in the high range. Not Cyberpunk 2077 of course, but most normal games :) Being realistic, there would be drops below 60 by times, but because of G-Sync on mine (believe this one has FreeSync, same benefit) I never found those drops to be noticeable. I found it a very good gaming experience with the ASUS 1080 Ti OC I had, but I'm not a competitive player needing 144 Hz+ all the time.
