Cauliflower rice is pretty decent too, especially if you want something of a similar texture to rice, but would rather forego the carbs.
I need to try this. do you cook it first or rice it raw and then cook?

@Lysrin we've done the pizza crust and were mightily disappointed in it...granted, store pizzas or boxed pizzas are generally terrible in the first place, so we weren't overly surprised. :P
 
breaded (panko) cauliflower baked in the oven then tossed in hot sauce. Not a replacement for good hot wings or anything but makes for a nice accompaniment to something like ribs etc.

There's a lot of variation between brands we found. We've had some we didn't care for either. My wife has sometimes made it from scratch but that is a lot of work, even if you buy the riced cauliflower.

Chopped in a food processor first, and then cooked. My wife has done it, for the most part, and we haven't had it in quite a while, but IIRC, simply cooked up in a large frying pan, with a bit of oil, and then toss in some soy sauce for a little more taste..... I'm sure a lot of variations will work equally as well. (y)
