Personally, I don't think it's worth it. IMHO, air will be just fine for the CPU. I generally go by this rule:
Anything above an Intel E8200(Dual-core) is suitable for watercooling.
Anything above an Intel Q6600/Q900(Quad-Core) is suitable for watercooling.

No, that's not how it goes. I think we're trying to tell you that an Intel chipset + an EVGA GTX 280 would kick butt.
I would recommend the DFI DK P35 + EVGA GTX280.

I'd just get a GTX260 or a GTX280. Both have more overclocking potential. But yes, it's possible to have Quad SLi. Also you could consider an ATi HD4870.

If you want to lower your temps even more you can take care of that wiring mess there.:haha: But nice job otherwise. I also think you should buy some Arctic Cooling MX-2 or some OCZ FreeZe. That will also lower your temps.

When it comes to the VRM cooling the Accelero struggles. But if you want another good aftermarket cooler you can consider the Thermalright HR-03 GT. Probably the best cooler for the HD4870.:thumb: SKY tested the Thermalright and it dropped temps almost 50%.:shok...

I agree with the others. You can't go wrong with the OCZ Vendetta 2. Also don't forget to buy a decent fan. The Noctua P12 or the Scythe S-Flex "F" are both very good choices.
