Great advice guys! Im wondering if there is a proper way to calculate the approximate runtime just based of the battery capacity and system load? Maybe I should look for as @JD said something that will double my max load (and with estimated runtime info that is transparent)- danmitch1

So the UDM-PRO is basically same as UDM-SE except the PoE ports, that's great to know if I only need 1 AP powered. pretty good savings. And great to know that theses AP's have such amazing range! Im wondering though, if they can afford it, maybe the PoE switch would simplify things and add more...- danmitch1

I think the general consensus is that even through expensive Ubiquiti is the way to go. Im curious if I can plug the SFP directly as crazyea mentioned, that would be great! I really didnt research that modem, I was going by what the client mentioned and they probably just assumed they could uplink via SFP since it was a fiber optic modem... Sounds very reasonable, I will suggest it. Also isnt wifi 6 6 9.6Gbs (in theory)? I forgot to say that the in wall ethernet runs are cat6 so that can do 10Gbs. (Im really new to networking stuff (obvious?)please bare with me :S ) @lowfat They are keeping their existing in wall ethernet cables (for now) so the 1GbE will do.
