1500$ eyefinity/surround system

ide go with a pair of gtx 670s then if you can afford it i believe they are faster than a 780 or and on par with a titan/690 especially when they are overclocked
 
WHen you run out of VRAM you get lower frames and stuttering. I have run Surround AND Eyefinity on 1GB VRAM cards and it can do it, just not as well. Once you really crank things up, it makes a major difference.
I hate to derail a topic, but I hate people who spout false information just because they heard something and ran with it.

Metro: Last Light on high settings @ 5891x1080 without SSAA almost never broke 1.3GB of memory usage and I've been hard pressed to get a game to even break 1.6GB memory usage. I stand by 2GB is more than enough. I didn't say I got perfect/smooth in every game with SLI 570 but I did say it was mostly good.
 
Ya i would also not go crossfire.

I had two 7870s and the stutter was unbearable.

I have herd of a 4gb gtx 770 could hold out a bit and see if that comes out might be a little more then your budget tho.
 
Looking at graphs last night I found I managed to use 2100MB (2.05GB~) of Video RAM on 2560x1440 with a 1080 desktop screen.

This was playing either WOW or NS2 as that's all I had running yesterday.

Problem with this though is my 670 had 2 GB so it wouldn't really impact me and when I had 1GB of Vram I was on 1080..
so I've no personal experience of running into the limits of ram but I would suggest for that res, 3GB+ if you have the funds to do it.
