I've got one of those filing cabinets but it's in my better half's office.

The top one looks interesting, but so far I've been avoiding anything on casters/wheels thinking that they wouldn't be very stable. If Castors would be stable enough, a small rolling tool chest workbench would provide the kind of weight and density I'm looking for.

Maybe a set of rubber chocks for the wheels would keep it stable?

Something like this might work well (or a proper tool chest from Costco)

 
I'm thinking maybe a restaurant supply type place? They should have solid steel counter-height tables.

Thrift shops or antique shops or something along those lines might happen to have something suitable? Obviously that means hunting around though.

There are heavy duty retractable casters available. However, they do protrude out. Depending on the weight you'd have to secure them with substantial screws or lag bolts. I use them for a small wooden workbench that I rarely use but need to move it occasionally.
 

I have 2 of these in the basement right now and been quite happy with them.

Resin printer and related stuff sits on one and filament printer on the other. Drawers provide storage and bottom shelf has been great to hold filament spools.

I find it more than sturdy enough however a small sheet of plywood spanned across the back legs just like how the peg board is wouldn't hurt if you wanted to take it a step further.

Also the price for what it is is nice.
